Why Mill Your Own Flour?

What Is Freshly Milled Flour?

 

Freshly milled flour is simply flour made by grinding whole grains just moments before you bake. Instead of using flour that may have been sitting on a store shelf for weeks or months, you're creating fresh flour in your own kitchen whenever you need it.

Every whole grain is made up of three parts:

  • Bran – the fiber-rich outer layer.
  • Germ – the nutrient-rich center that contains healthy oils, vitamins, and minerals.
  • Endosperm – the starchy portion that provides structure and energy.

When you mill grain at home, all three parts remain together exactly as nature intended. Nothing is removed, bleached, or enriched later.

Many commercial white flours are refined by removing the bran and germ, leaving primarily the endosperm. While enriched flour has certain nutrients added back, freshly milled flour contains the complete grain from the very beginning.

Is Freshly Milled Flour Healthier Than Store-Bought Whole Wheat Flour?

That's often the primary reason people decide to invest in a grain mill.

What surprises many new millers is that while they come looking for better nutrition, they stay because of the incredible flavor and aroma of bread baked with freshly milled flour. Once you've tasted bread made with flour milled just minutes before baking, it's difficult to go back.

 

Every wheat kernel is made up of three parts: the bran, germ, and endosperm. Together, these three parts contain the grain's naturalfiber, healthy oils, protein, vitamins, minerals, and complex carbohydrates.

One of the biggest differences between freshly milled flour and commercially packaged whole wheat flour is freshness.

Whole wheat berries can be stored for years under proper conditions with very little loss in quality. But once those berries are milled into flour, the clock begins to tick. Exposure to air, light, heat, and moisture gradually changes the flour. The natural oils in the wheat germ slowly oxidize, affecting both flavor and freshness over time.

 

That's why so many people choose to mill only what they need. Instead of using flour that may have been milled weeks or months earlier, they grind fresh flour just moments before mixing their dough. The result is flour at its peak freshness—ready to become bread, rolls, pizza dough, cookies, muffins, pancakes, pastries, and more.

 

If you're comparing freshly milled flour to enriched white flour, the differences become even greater. White flour is refined by removing much of the bran and germ, leaving primarily the starchy endosperm. To replace some of what was removed during processing, manufacturers enrich white flour by adding back several nutrients, including thiamin (Vitamin B1), riboflavin (Vitamin B2), niacin (Vitamin B3), iron, and folic acid. While enrichment restores certain nutrients, it does not recreate the complete whole grain.

 Freshly milled flour allows you to enjoy the grain exactly as nature intended—nothing removed, nothing added back later, and milled only moments before it becomes part of your family's meal.

One of the best-known illustrations of this tradition appears in the classic children's story, The Little Red Hen. The hen carries her wheat to the local mill, takes the freshly milled flour home, and bakes bread immediately. While the story isn't about food science, it reflects something that was common for generations: flour was often milled close to the time it was used.

Stone Mill vs. Impact Mill: Which Is Right for You?

One of the most common questions we hear is:

"Should I buy a stone grain mill or an impact grain mill?"

The answer depends less on which mill is "better" and more on how you plan to use it.

We've been selling and repairing grain mills since 1979, and we've found that both styles produce excellent flour. They simply have different strengths.

If your primary goal is baking beautiful artisan breads and having the ability to choose different flour textures, a stone mill is often the better choice.

If you bake frequently, want to grind large amounts of flour quickly, and are looking for the best value, an impact mill is hard to beat.

Neither is the "right" answer for everyone. The best grain mill is the one that fits your baking style.

Stone Mills

Stone mills use two precision milling stones that slowly grind grain into flour.

Because the stones can be adjusted closer together or farther apart, you have complete control over the finished texture.

A quality stone mill can produce:

  • Pastry flour
  • Bread flour
  • Whole wheat flour
  • Cream-of-wheat consistency
  • Cracked wheat
  • Coarse cereal grinds

Why Corundum Ceramic?

High-Speed (Impact) Flour Mills

High-speed flour mills, also known as impact mills, produce flour very differently than stone mills. Instead of grinding grain between stones, they use precision-engineered stainless steel milling heads spinning at nearly 30,000 RPM.

The milling heads don't cut the grain like knives. There are no blades, burrs, or metal-to-metal grinding. Instead, the grain repeatedly strikes specially engineered stainless steel milling surfaces until only fine flour remains.

The high speed serves three important purposes. First, it reduces grain into flour in just seconds. Second, the powerful airflow created inside the milling chamber continuously carries finished flour away from the milling heads, creating a natural self-cooling effect. Finally, that same airflow helps keep the milling chamber remarkably clean during normal operation.

 


Did you know?

Although the milling heads spin at nearly 30,000 RPM, the flour itself spends only a fraction of a second inside the milling chamber before being carried away by the airflow. That's one reason quality impact mills produce flour with very little heat buildup, helping preserve flavor, aroma, and nutrients.
