Nicoise Salad

Here is our riff on a classic French salade niçoise. The only cooking is boiling the potatoes, green beans, and soft boiled eggs, which we do in the pressure cooker to make it fast, and keep our kitchen cooler. Dressed in a light, lemony vinaigrette, this makes a perfect summer salad.
