Whole Wheat Soft Sourdough Baguettes


Fit the kneading arm and dough hook extender into the bowl of the Bosch mixer and add 2 cups of flour and the other ingredients. Turn mixer to medium speed and gradually add remaining flour until a soft and slightly sticky dough forms. Knead 6-8 minutes.

Spray a large glass bowl with Vegalene and transfer dough to greased bowl. Cover with plastic wrap that has also been greased. Allow to rest at room temperature 6-24 hours.

For Soft Baguettes:  Remove the dough from the bowl and divide into 6 equal portions. Shape into long rolls and place in the pans.

For Soft French Bread:  Divide the dough in 2 equal portions, shape into long rolls and place in the French Bread pans. 

Rise approximately 2 hours. Preheat oven to 400 degrees.

Brush tops of loaves with egg wash and cut 3-4 diagonal slashes about 1/2-inch deep down each loaf. Bake until internal temperature reaches 180 degrees, about 12 minutes for baguettes and 18 minutes for French bread loaves.
