Olive Oil Brownies

Instructions:

Preheat oven to 350 degrees. Spray an 8 or 9-inch square baking dish lightly with cooking spray. Line with parchment paper and spray again. Set aside.

In a medium bowl, whisk together the flour, salt, and baking powder. Set aside.

In a large bowl, whisk together the cocoa powder and the boiling water until smooth. Whisk in the olive oil, unsweetened chocolate, egg, and vanilla. Whisk in the brown sugar and granulated sugar then fold in the flour, then the chocolate chips.

Bake until just a few moist crumbs cling to a toothpick, 20 – 25 minutes. Immediately sprinkle the brownies with flaky sea salt. Let cool in the pan, then lift the brownies out using the parchment paper and cut into squares.
