Soft Gingersnaps - Vitamix

Instructions:

Heat oven to 350 degrees F.  In a bowl, combine flours, ginger, baking soda, ground cinnamon, and salt.  Set aside. 

Place egg, molasses, sugar and margarine in a high power blender in the order listed and secure the lid.  Start slow (pulse on Bosch mixer) and increase the speed until full power.  Blend for 15 seconds.  Add the liquid from the blender to the bowl with the dry ingredients and stir to incorporate.  Chill the dough for 30 minutes. 

Using a #40 scoop, scoop dough and roll into a 1-inch ball (2.5 cm) between your hands.  Roll each ball in the ground cinnamon-sugar mixture and place each dough ball 2 inches apart on a lined baking sheet.  Bake for 10-12 minutes until the tops are rounded and slightly cracked.
