Austin's Sweet Potato Casserole

Instructions:

Preheat the oven to 425 degrees. Prick the potatoes all over with a fork and bake until fork tender, 40 to 50 minutes. Alternatively, pressure cook the sweet potatoes with 1 cup of water on high pressure for 35 minutes with a quick release. Reduce or preheat the oven temperature to 400 degrees. 

Let the sweet potatoes cool just until they are cool enough to handle then peel the skins off. Place the peeled potatoes in a large bowl and mash to your desired consistency. Add the granulated sugar, milk, eggs, vanilla, and salt, and mix until completely combined. Spread the mixture into a 9- by- 13-inch baking dish and set aside.

In a bowl, combine pecans, brown sugar, flour, and butter. Mix with a fork or your fingers until combined and the mixture is the consistency of wet sand. Sprinkle the topping evenly over the sweet potatoes. Bake in the 400 degree oven for 30 minutes. Serve warm or at room temperature.
