Irish Tacos
Instructions:
If using leftover corned beef, warm it in the cooking liquid or wrap in foil and set on a sheet pan in a 350-degree oven for 20 minutes.
Whisk together mayo, sour cream, vinegar, and hot sauce. Pour half of the sauce over the cabbage and carrots, toss together and taste for salt and pepper. Add more sauce if the cabbage seems dry.
When the corned beef is hot, remove from the liquid and shred. Serve with warmed tortillas, slaw, reserved sauce, and additional hot sauce. Throw on a few sliced fresh or pickled jalapenos if you’re feelin’ the heat.
