Caramel Apple Upside Down Cake
Instructions:
Adjust a rack to the middle position of the oven and preheat to 350 degrees. Spray a 9-inch round cake pan with baking spray, line the bottom with parchment paper, spray again, and set aside.
Make the caramel apple layer: Heat the caramel in a microwave safe dish or in a saucepan over medium low heat until melted, then whisk in the heavy cream. Pour the caramel into the prepared pan then arrange the apple slices on top of the caramel, overlapping them slightly.
Make the cake: In a large bowl, mix the granulated sugar, brown sugar, eggs, milk, oil, and vanilla until well combined. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and ginger until well combined. Pour the flour mixture into the sugar mixture and mix until a few streaks of flour remain. Add the diced apple and gently mix in until just combined.
Pour the cake batter gently on top of the caramel and apples. Bake until the cake is golden on top, and a toothpick comes out clean, about 45 minutes. Transfer the cake to a wire rack to cool in the pan for 10 minutes (NO LONGER OR IT MAY STICK) before inverting it on to a plate. Serve warm or at room temperature.
