Garlic & Ginger Turkey Stir Fry

Ingredients:

4 garlic cloves, thinly sliced
6 green onions, thinly sliced
1/4 teaspoon crushed red pepper
2-inch piece of ginger, grated
1 pound ground turkey
2 tablespoons fish sauce
1/4 cup soy sauce
1/2 teaspoon sugar or honey
1 pound sugar snap peas, trimmed
Juice of 2 - 3 limes
1 bunch cilantro, chopped
1/3 cup roughly chopped basil leaves
Chopped peanuts or cashews

Instructions:

In a cold, 12-inch skillet, add 2 tablespoons of coconut oil and the sliced garlic. Turn the heat to medium and cook, stirring frequently, until the garlic is golden brown. Transfer the garlic pieces to a paper towel and sprinkle lightly with salt.

If the pan seems too dry, add another tablespoon or two of coconut oil, then stir in the white parts of the green onions. Cook until they start to brown, then add the crushed red pepper and ginger and cook another 30 seconds.

Add the turkey to the pan, raise the heat to medium high, and cook, breaking the meat up, until cooked through. Season with salt and pepper. Stir in the fish sauce, soy sauce, sugar, and peas. Cover with a lid and steam until the peas are cooked, 3 to 5 minutes.

Remove the pan from the heat. Stir in the lime juice, and half of the cilantro, basil, peanuts, tops of the green onions, and fried garlic.

Serve with steamed rice and the other half of the cilantro, basil, peanuts, green onions, and garlic.
