One Hour Cinnamon Rolls
Instructions:
Fit a stand mixer with the dough hook. Add the water, sugar, oil or butter, and yeast and mix to combine then let rest 15 minutes.
Add the salt, cinnamon, eggs, and flour and knead for 7 minutes. Transfer the dough to a very large bowl that has been sprayed with baking spray and let rest for 10 minutes. Preheat the oven to 400 degrees. Spray three 9-by-13-inch pans with baking spray.
Divide the dough into thirds. Working with one third of the dough at a time, roll into a rectangle about ½-inch thick. Spread ½ cup butter evenly over the dough, then sprinkle with brown sugar, cinnamon, and nutmeg, or any other fillings. Roll into a tight cylinder and cut into 12 even pieces. Place in the prepared pan and repeat the process with the remaining two sections of dough. Let rise for about 10 minutes then bake for 20 to 25 minutes. Frost while warm.
For the frosting:
6 ½ - 9 cups powdered sugar
1 ½ sticks softened butter
12 ounces softened cream cheese
1 teaspoon vanilla extract
Mix all ingredients until smooth. If mixture gets too thick, add a few drops of water to achieve the desired consistency.
Raspberry Rolls:
In place of the brown sugar cinnamon filling, use butter, granulated sugar, and warmed raspberry jam.
Orange Rolls:
In place of the brown sugar cinnamon filling, use butter, granulated sugar, and zest from one orange. Add the juice of one orange to the frosting.
